Apple Crisp

  • 1 tsp. cinnamon
  • 1 cup sugar
  • 3/4 cup flour
  • 1/3 cup soft butter
  • 4 cups sliced apples

Heat oven to 350 degrees.Spread in 8-inch square pan 4 cups sliced apples. Sprinkle with mixture of 1/4 cup water and 1 tsp. cinnamon. Work together until crumbly, using pastry blender, 1 cup sugar, 3/4 cup flour, 1/3 cup soft butter. Spread crumb mixture over apples. Bake uncovered about 40 minutes. Serve warm.


Apple Upside Down Cake

  • 3 cups peeled, sliced apples
  • 1/2 cup sugar
  • 1 Tbsp. butter or margarine
  • 1/2 tsp. cinnamon
  • 2 cups flour
  • 2-1/2 baking powder
  • 1/2 tsp. salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1 tsp. vanilla

Grease a 9-inch square pan well. Combine apples, 1/2 cup sugar, butter and cinnamon in a sauce pan. Cook until tender, stirring frequently. Pour into baking pan. Combine flour, baking poder and salt. Cream shortening together with sugar. Blend in eggs, one at a time, beating well. Combine milk and vanilla, and add alternately with dry ingredients to creamed mixture, beginning and ending with dry ingredients. Spread over apples in pan.

Bake in 350 degree oven 35-40 minutes or until done. Remove from oven. Turn cake upside down over serving plate. Let stand a few minutes. Remove pan. Makes 9-12 servings.


Sour Cream Apple Coffee Cake

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp salt
  • 1 cup (8 ounces) sour cream
  • 1-1/2 cups chopped peeled baking apples

Topping:
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 2 tablespoons butter or margarine, softened
  • 1 tsp. apple pie spice

In a mixing bowl, cream butter and sugar. Beat in eggs and vanilla. Combine flour, baking soda, and salt; add alternately with sour cream to the creamed mixture. Fold in apples. Spoon into a greased 9-inch square baking pan. In a small bowl, mix topping ingredients; sprinkle over batter. Bake at 350 for 35-40 minutes or until done. Yield: 9 servings.


Apple Pizza

  • 11 ounce package pie crust mix
  • 5 medium apples
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup butter
  • 1/2 cup chopped walnuts (optional)

Make up dough for two crust pie. Roll out all dough to one 14-inch round. Place on ungreased 12-inch pizza pan. Turn under edges and flute. Core, peel, and slice apples thin on pie shell. Stir remaining ingredients, except nuts, together until crumbly and add to top of apple slices. Sprinkle walnuts over pie and bake at 450 degrees for 25 minutes. Serve with ice cream or cheddar cheese, if desired.


Apple Pear Cake

  • 2 cups shredded peeled apples
  • 2 cups shredded peeled pears
  • 2 cups sugar
  • 1-1/4 cups vegetable oil
  • 1 cup raisins
  • 1 cup chopped pecans (optional)
  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt

In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture. Pour into a greased 13 X 9 baking pan. Bake at 325 degrees for 1 hour or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Suggested toppings: vanilla frosting, powdered sugar, cream cheese frosting, whipped cream.


Macaroon Apple Cobbler

  • 4 cups thinly sliced tart apples
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup flaked coconut
  • 1/4 cup chopped pecans

TOPPING:
  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder

Place the apples in an ungreased 9-inch pie plate. In a small bowl, combine sugar and cinnamon; sprinkle over apples. Top with coconut and pecans; set aside. In a mixing bowl, cream butter and sugar. Add egg and vanilla; mix well. Combine flour and baking powder; add to creamed mixture until blended. Carefully spread over apples. Bake at 350 for 25-30 minutes or until topping is golden brown and fruit is tender. Serve warm. 6-8 servings.
